Low-altitude and low-density coffees necessitate a more delicate approach to roasting, with careful attention to burner temperature and airflow. Excessive tweaking and too much heat can lead to roast defects such as tipping and scorching, resulting in undesired bitterness, astringency, and 'off' flavours in the cup. Our goal was to find a balance, creating a versatile coffee that highlights the unique characteristics of its origin. It's all about preserving the bean's integrity while crafting a smooth, enjoyable brew.
